Ramune, casually pretending to be on the phone!

Sean, the head chef, is from Armagh and began his restaurant career almost 15 years ago at Larry’s Piano Bar in Belfast. Since then he has worked in restaurants throughout Ireland from where he brings a vast repertoire of culinary skills and dishes, enabling him to adapt the menu regularly. Ramune, a native of Lithuania, moved to Ireland eights years ago after studying Tourism and Hotel management in Vilnius. She found herself working and managing in the tourism industry within months of moving here. Ramune has great people skills – even the hard to please leave wanting to come back to chat with her again and again!

Priory House Bistro & Restaurant is set on the edge of the historical Benburb Manor House in the grounds of Benburb Valley Park. It is a fine 17th Country stone building it was once the old Police Barracks and Courthouse of Benburb which has been recently renovated and then redecorated by Ramune, Sean and Artist Stephen Farnan. The bohemian look really fits in with the relaxed quirky atmosphere, suiting each of its small intimate rooms.

Priory House West Restaurant prides itself on serving dishes that have been prepared from fresh ingredients that are locally sourced, complimented by our own range of organic home-grown herbs. That means no powder soups, no bought sauces and no frozen vegetables – it’s all fresh!
